What sort of EGT should I see at partial throttle, medium load, and 3-5k rpms?

That's directly dependent on the distance your EGT sensor is from the face of the piston, the load (hill, headwind), pipes, and a long list of other factors. In my experience EGT is only really good for long wide open pulls on a controlled course (or section of road). Once you get it dialed 10 degrees F up or down will be adjustable consistently with very fine mixture changes.
